No-Bake Chocolate Oats Peanut Butter Cookies

Ingredients:
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla extract
1 cup peanut butter
3 cups quick oats
1/4 cup coconut (optional)
Instructions:
Line a baking sheet with parchment paper for easy cleanup. In a medium saucepan, combine the sugar, cocoa powder, milk, and butter. Stir over medium heat until the mixture comes to a rolling boil.
Once boiling, let it cook for about 2 minutes without stirring. This helps to create a nice texture. After 2 minutes, remove the saucepan from heat. Stir in the vanilla extract and peanut butter until smooth. Mix in the oats and coconut to the mixture, stirring until well combined. Drop spoonfuls of the mixture onto the prepared baking sheet. Allow them to cool at room temperature or place in the refrigerator to set. Enjoy!
